Tamales





Christmas Eve in Mexico brings one festive food to the minds of many Mexicans...TAMALES. This morning I helped with the tamale making process and I finally learned how to assemble them. We are going to freeze them until December 24

The Process
1. Enlist many volunteers
2. Roll up your sleeves
3. Mix 2 kilos lard until your hands hurt
4. Add 5 kilos ground corn stuff and mix until your arms hurt until your elbows
5. Add Chili, salt, and broth and mix until your entire upper body hurts
6. Put into old corn husks (clean first)
7. Place the lard/corn mixture in the husk
8. Top with spicy meat
9. Add a potato wedge, carrot wedge, green olive and jalapeƱo
10.Fold like burritos and place in baggies to put in the freezer

And there you have it. That is it, your own frozen tamales.

P.S. Not a food for the dieters.

P.S.S. I tried to explain that "Hot Tamales" really mean a red candy that taste like cinnamon...the women were unimpressed.

They sound very tasty! Also, very time consuming. Cooking is always more fun when you can work with a group.
